The Calories In/Calories Out Paradigm — The Key To Long Term Weight Management FAILURE!


****The following is NOT and in depth explanation, it simply scratches the surface to get folks thinking and talking.  Joe****

The mythical calories in/calories out ideology has been perhaps one of the biggest obstacles in successfully managing obesity and very well maybe one of the direct causes of the current obesity crisis.  I am sure you have heard that to lose weight you need to burn more calories than you take in.  The correlation can, on the surface, appear to make sense — however, in reality it doesn’t.  It may help you lose weight, regardless if it is fat or muscle or fluid.  Calorie restriction can negatively effect body mass.  How many of those who follow calorie restriction, no matter how they exercise, are skinny/fat?  Yes, it will work in the short term, but can you basically starve yourself for long term obesity management?  Following this theory, your weight should dramatically fluctuate from day-to-day, week to week and month to month, based on how much more activity you either put out or how much more or less food you consume.  Human physiology does NOT work that way.

The simple fact is — a calories is NOT a calorie.  Basic physiology will tell us that the human body will process different foods in different ways. The processing of different foods is heavily influenced by the release of hormones, one in particular is insulin.  This is the reason why low carbohydrate eating is such an effective means of not only losing weight, but keeping it off — permanently.

Those that espouse the calorie model of weight management will try to convince you that it doesn’t matter what you eat, just so long as you restrict the number of calories you consume.  So you can eat, say 1,500 calories a day.  To the advocates of caloric restriction it doesn’t matter if you eat 1,500 calories of ice cream, steak, bread, potatoes, chicken, fish, candy,… okay, you get the idea.  Just as long as you restrict caloric intake, you will lose weight.

You want to know something, this may work, to a point.  However, for a large majority of folks, it will not work in the long-term, and it will definitely not help improve your overall health.  If you are consuming 1,500 calories of sugar, every day, your pancreas is secreting large amounts of insulin, eventually, potentially, leading to insulin related issues including weight gain, obesity and, as Paula Deen was recently diagnosed with, type II diabetes.Grain products are often baked, and are rich s...

The body does not process carbohydrates, proteins and fats the same way.  It is pretty obvious that simple carbohydrates and to a large extent, complex carbohydrates, have a negative effect on the human body.  All carbohydrate, with the exception of fiber is eventually broken down into a simply sugar — so, all those complex carbs you have been dutifully consuming all become either glucose, fructose or galactose.  They will all cause insulin to be released, and if not utilized almost immediately, the excess energy will be stored as fat in the body.

It does matter where your calories come from, it does matter in which form you consume them and it does matter to your overall health what you eat.

I am an advocate of low carbohydrate eating.  Not simply restricting carbohydrates, but eating foods that are not processed and do not contain large amounts of non-fibrous carbohydrate.  I eat foods in as close to the natural state as possible, so I am also an advocate of paleolithic and primal eating.  By combining these two approaches, I have kept my weight in check for the last two years.  Most importantly, the long term benefits are an active, fit and healthy quality of life.

Paula Deen and Adult Onset Diabetes


I was trying to think up a catchy title for this column, I did have a few, but after some thought, I just decided to keep it simple.

I have been following the reports of Paula Deen’s emergence from the type II diabetes closet.  It turns out, that the charming southern lady, has been suffering with the potentially preventable ailment for a couple of years.  Even though I no longer indulge in the garbage they serve up, I am a huge fan of The Food Network and its sibling The Cooking Channel.  I would say that next to sports, these channels make up the bulk of my television viewing.  I watch for the entertainment value of the programming and to continually challenge my will power against the sugar soaked, carbohydrate crammed, body fat converting foods that are shoveled into each host’s mouth day after day.

I regularly invite the very charming Ms. Deen into my home day after day.  I admire her story of tenacity and success in the face of grand hardship.   Overcoming odds and truly starting with nothing more than two hundred dollars, she went from selling bagged lunches to presiding over a colossal culinary empire.

Among Emeril Lagasse, Alton Brown, Duff Goldman, Rachel Ray and Mario Batali; Paula is one of my favorites.  However, I noticed from their beginnings, my favorites have one thing in common — along with their expanding Food Network success, the mass of their body’s has also expanded.  Rachel seems to go up and down, AB took control of his weight in 2010, but Emeril, Mario , Duff and Paula seem to revel, not only in their roles as overweight, cherub-like chefs, but in the rolls they bake up.  As I took control of my health, I realized that these stars, whose persona’s I so like, are slowly destroying their own health — and in turn, those who consume their detrimental, deleterious, dietary dishes.

Over the years, The Food Network has become an enemy of the state of good health and fitness.  Their shows have denigrated from chef’s who prepare whole food meals, to purveyors of food porn, producing and promoting nothing more than molto monosaccharide menageries of sickening sweets.  Ms. Deen has claimed that the foods she whipped up were not for everyday consumption.  Really? Come on Paula, observation of your progressive weight gain leads one to summarize that simply ain’t so.

In addition to the sorrow I feel over her having to deal with the results of her starch filled dietary habits, I am even more sad that those educated equine gluteus maximus promoters of the Standard American Diet, have demonstrated their deep-seated prejudice and ignorance, by proclaiming that Paula’s proclamations of “butter makes it better,” as the cause of her adult onset diabetes.

It was NOT the butter that caused her body tissues to develop insulin resistance. 

It was NOT the lard nor fat that caused the over secretion of insulin to convert excess macronutrients into stored body fat. 

No, it was the consumption of processed flour, simple sugars and other polysaccaridic starches that glutted her system with glucose which caused her unfortunate ailment.  While I do feel bad for Paula, I am appalled that, in lieu of taking appropriate dietary measures to manage her mellitus, she has opted for the pharmaceutical fix, the continued consumption of carbohydrates and perhaps worse of all — the erroneous mantra of moderation, all of which will only lead further down the road of health ruination.

I watched Emeril the other day on one of the morning shows, and he was asked about his friend Paula Deen.  He related that he had been dealing with diabetes in his family and then verbalized some ludicrous statement that moderation was key.  Moderation compared to what?  If one consumes a dozen doughnuts a day; as I did in my morbidly obese days, then moderation would be half a dozen — does that make any sense!?!?

Obviously, if Paula has been diagnosed since 2009 and Emeril has been dealing with this in his family, then their practice of moderation has manifested itself in their own health robbing, not so moderate, obesity.  Moderation does NOT work.  Mr. Lagasse, if you are going to weigh into the conversation with such a throw away line as guidance, then you have to be an example such guidance is effective.

Obesity has health consequences beyond type II diabetes and by some is considered a disease.  Well, let us draw a parallel — alcoholism and drug addiction both have negative health consequences, and both are considered diseases.  Would any responsible health professional recommend, as a solution, moderation?  Of course not! It isn’t only ludicrous, it is down right asinine.  For the overwhelming majority of people, if you have obesity related type II diabetes; moderation is NOT the answer.  It is time to realize that sugar, starches and processed carbohydrates must be relegated to the past and eliminated from the diet.  Besides, once you clear the crap carbs from your system, you will feel so much better — you will wonder why you had been eating them in the first place.

I am all too well aware, not only as an educator, motivational speaker, weight loss/fitness author and chiropractor, of the damage that diabetes can wreak on human physiology, but also as someone with a genetic predisposition to the disease.  As  a young child, I witnessed my maternal grandmother inject her daily insulin into various parts of her anatomy.  As an adult, I helplessly watched as my father endured thrice weekly kidney dialysis because diabetes rendered his renal system useless.  My family history is why I chose to battle obesity using the most common sense approach; restricting carbohydrates and consuming as close to nature foods as possible.  By combining the low carb approaches of the likes of  Dr. Atkins, Dr. Eades, et. al.,  along with sound paleolithic, primal eating — I not only scored a victory over the layers of lard that enveloped my body, I improved my overall health and fitness.

Paula and Emeril, since you have placed yourself out there giving advice, perhaps it is time you actually learn the proper advice.  I will be happy to help either, or both of you, take control of your weight and in turn take control of your health.

Who Do I Blame Because I’m Fat?


Who do I blame because I’m fat? That is the question I get frequently. I have received this question in messages, emails, phone calls and from clients  in my office. It seems that we are all looking to place blame.

Unless you suffer from an underlying medical or hormonal condition, the onus is on ourselves.

In the last chapter of my book, I trace back to where my emotional reliance on food began.  Though I traced it back to my childhood, it was not a valid excuse. Some day, as much as we may not want to, we must all mature and accept responsibility for ourselves.

I alone was responsible for my morbid obesity.

Which brings me to the following; I received an email from a client, who was especially upset about WILK  radio talk show entertainer, Steve Corbett, who has endorsed businesses in which the food consumed can lead to obesity. This friend was ripping, not because of the commercial, but because the pious and self-righteous Steve Corbett,  constantly preaches against many unhealthy activities. The great unkempt one even goes so far as to rail against smoking, proclaiming an extreme view, that all tobacco CEO’s should be locked up.  My client one time followed a vegetarian diet solely because this radio host proclaimed it as a healthy lifestyle choice.

It amazes me at how much sway an entertainer can have over some people, but that is the nature of advertising. It is the reason that sponsors will pay exorbitant fees to have someone endorse their product.

However, the point being that no matter the hypocrisy, my client reasoned that if Corbett who portends to be all knowing  preaches other healthy habits, he must know what he is talking about. He began stopping by this establishment regularly. He had so much faith in what the host was saying, that he took all of the education he had received through our meetings and tossed it aside. Much of the gains in his health that he had made fell by the way side as his old habits reared their ugly heads.

Finally, after regaining about twenty-five pounds and feeling so cruddy because he hadn’t been in the gym in almost one month, he sent me an email. He asked for an appointment to get back on track.

Once back in my office, before he even sat down, he began assigning blame. I genuinely could not believe what I was hearing.

I stopped him mid-sentence. I repeated back to him what he was saying. After I repeated myself a few times he understood what had happened. He utilized his faith and trust in another person to justify HIS falling back into bad habits. It was easy, because someone he respected, someone in whom he had put trust, was, via a paid endorsement, implying that  it was okay to eat sugar laden junk food.

After a few weeks my client was back on track. He would soon go from fat to fit.  It only took him two weeks to take off half the weight he had regained and he is back into healthy activities in the gym.

He learned the hard way that entertainers who are paid spokespeople aren’t always correct.

Adversity — Setback or Opportunity?


Lately, life continues throwing me some heavy-duty, rib-breaking body blows.

Compared to many I am blessed, but recently — I don’t feel that way. The reality of owning a business in these current economic times can impact us all. I feel much like I did a few years ago. Similar situations caused apathy, which in turn led to laziness. The result was that my weight ballooned to a ponderous, pachydermian three hundred and forty pounds and my fitness levels plummeted to previously unforeseen depths.

On a recent morning, when the alarm clock sounded, for the first time in a long time, I had the desire to shut the buzzer off and roll back over. Reawakened by my current situation, my inner demons reared their ugly heads.

Thoughts of pancakes, home fries, doughnuts and waffles for breakfast started bubbling to the forefront of my brain. Later, I could go for a pizza and a nice pot of pasta. Then, in the evening, maybe a pie and a pint or two of ice cream. The comfort foods would work their soothing magic.

The demons screamed into my skull:

Why exercise?
Why eat right?
What is the point?
Think of how nice it would be to sleep, on a full belly, an extra three hours each morning.

I knew that the combination of sloth and gluttony would once again isolate me from the outside world. The calming influences of empty calorie, carbohydrate loaded foods would help me sleep. The lack of exercise would convert the excess consumption into a protective layer of fat and I would once again be isolated from the rest of the human race.

I look up and studied the proverbial rope that is keeping me from plunging into Hell’s fires. The repair jobs, from the previous occasions in which life almost took me down, were once again frayed. The gremlins and gravelings, which are busily hacking away at the rope, are now more than half way through.

Will the rope give all together? Will my life and future plummet into a great abyss? It very well might. When it desires, life can be a cold and heartless bastard. The big question is:

Will I embrace my inner demons  and willingly hasten my demise?

I stayed in bed and wondered what it would be like to have had a charmed life. I asked myself:

How different would it have been if my father hadn’t been forced on to disability by a life altering injury?

How would it have been if my parents could have afforded to send me straight to college out of high school?

Was my judgment to enter the Navy, to alleviate the burden of at least one child to care for, the correct decision?

Yes, the self-doubt and self-pity of despair were being cheered on by the demons. Much like WILK talk radio host Steve Corbett, my inner mischievous sprites are acting as the harbingers of doom — joyfully, fanning my flames of despair, discontent, doubt and disillusionment.

How easy would it be to embrace their self-destructive message!
How simple would it be to return back to my former indolence!
How effortless would it be to add a hefty burden to the rope!

As these thoughts ran through my head, a truck driver outside my window slammed on the brakes. As the tractor-trailer came to a very loud halt, its cargo violently shifted and I was jarred by a thunderous clang. My still sleeping brain interpreted the clamor into the clang of iron plates being dropped onto the gym floor.

Thoughts of clanging and banging iron sent a familiar shiver through my body. I jumped from my bed and the demons hid in terror. I would not give into their cursed cheering.

There is no time for self-pity.
There is no time for self-sorrow.
There is no time for self-destruction.

The rope is starting to show threads.
I am not sure how long it will hold out.
I will not increase its burden by adding weight to my frame.

As much as we tend to think otherwise, there is very little in our lives over which we have control.

Well run businesses fail everyday.
Bad, at times awful, things happen to good people.
Politicians pass laws regardless of the actual outcomes.
Hard working, loyal employees often find themselves without a job.

Is adversity a setback or an opportunity?

It is all in  how we choose to view it. We can allow bad luck, bad decisions and just flat out bad situations dominate, control and beat us down —  or we can choose how we respond.

For the last two weeks injury, medication side-effects and an illness have kept me from the gym.  Tomorrow morning I can’t wait to get back.

You see, I choose how I respond. I choose not to allow those demons that were screaming effect me.  And, I choose to tell those demons to go straight back to hell!

The one thing we can control is ourselves.

We can control our mental attitude.
We can control our fitness level.
We can control what we eat.

In spite of Gary Taubes’s anti exercise writings, I will continue my endeavors in exercise. Because, by being physically fit and strong, if that rope does give out, I will be powerful enough to reach up, grab the remaining end and support myself.

Don’t quit on being fit!

The Internet’s Low Carb Standard Setter: Jimmy Moore


The other day, I received an email from fellow low carber and the founder of The Livin La Vida Low Carb Blog and Podcast, Jimmy Moore — Jimmy’s podcast is getting ready to hit a major landmark; EPISODE #500, and Jimmy asked me, as a former guest, if I would like to say a few words. Of course I jumped at the chance and after a couple of changes to my schedule, I sit here at my computer waiting for our Skype meeting.

For those of you who may not know who Jimmy Moore is or about his Livin La Vida Low Carb Blog, check it out as soon as you are done reading this posting. You, as I was and still am, will be blown away by the amount of great information.

It really seems like it was just a short time ago that I was a guest on The Livin La Vida Low Carb Podcast, but it was actually quite some time ago.  I was the guest on episode 252 that aired in May of 2009.

As most of you know, in March of 2008, I decided to take control of my life and begin an Odyssey From Fat Then To Fit Now.  I opted to travel the low carb road to get there and shortly after I began my journey, I came across Jimmy’s web site and became a regular reader and listener.  Although I had read much of the same research, as a clinician I use research in an applied manner and while I understand and know the details, I can’t cite them from memory.  Fortunately, Jimmy’s site is a treasure trove of research information, experts and links, which I have often referred to or referred others to read.

If memory serves me correctly, one of my clients contacted Jimmy, who in turn contacted me to be a guest.  When I received his correspondence I was completely floored.  It was a great honor to be asked to appear on what was and remains the premier web destination for low carb information and experts.  I remember the pre-show conversation we had and Jimmy said to me that we would record for about half an hour; if I was really interesting we might go to forty five minutes; well the show went about fifty five minutes and we had a really great exchange — even when we disagreed on a point or two.

It was my first of what has become many internet, radio and television appearances concerning weight loss, fitness and more recently childhood obesity and bullying.  A few moments ago, I listened to the interview and I am disappointed in myself that many of my ambitions for Fat Then Fit Now, the book, speaking tours and webinars have not been realized.  I can offer many excuses as to why, however we all know how I feel about excuses.  The fact is that I simply haven’t made the appropriate time to make it happen.  However, with the battle for our nation’s health and well being so important, I have now made the commitment and effort to make all of my ambitions reality.  There are many out there like Dr. Melina Jampolis spreading misinformation, Martin Kessman demanding victimhood status for his lack of personal responsibility and Chef Duff Godman encouraging overindulgent gluttony who must be challenged.  Their influences are among the many reasons that we have both an adult and childhood obesity epidemic destroying the health and wellness of our fellow citizens.

Jimmy Moore has been one of the leaders in spreading educational information and the truth about what a proper diet should be.  I am proud to be asked to offer my insight and I am proud to consider him a friend.

Enemy Of The State Of Health And Fitness: The Ace Of Cakes

This weeks edition of the new and improved ESHF is a particularly difficult one for me.  I have been charmed by Duff Goldman’s on-air persona and I have really enjoyed his show, Ace of Cakes. However, his latest program, Sugar High, is what has earned Duff a spot on my ESHF list.

As many of you are aware, I am a low carbohydrate follower and proponent.  Actually, in the last several months, I have  shifted gears and a more accurate description of my eating would probably be closer to a  low carb, paleolithic, primal model.  Most of my food choices are as close to nature as can be found, I shop local farmer’s markets and I can’t remember the last time I have eaten anything prepackaged.

With all that said, I still indulge in what the internet’s low carb standard setter, Jimmy Moore, has coined as “planned splurges;” although they are less frequent than I had originally written about in my book.  So, every now and then, I enjoy the foods that aren’t part of a regular low carbohydrate plan.  I do it for several reasons, including the fact there are foods from my Italian heritage that I just happen to enjoy eating, I absolutely love Thanksgiving feasts and yes, even some cake on my birthday.  As I have often stated, I have lost weight and improved my fitness level to enjoy life and these sinful foods are an occasional part of that enjoyment. The difference between now and then is that my mental and physical discipline keeps me focused on the more important aspects of my life; good health and fitness, and these splurges are the exception, not the rule they once were.

Back to this week’s ESHF, Chef Duff.  I was a fan of his show, Ace of Cakes, because that show celebrated the artistry of occasion cakes.  The viewer was aware that these cakes were not for everyday consumption, partly because of their ornateness and partly because of their price, so the entrainment came from following the construction of the pre-consumed, finished product.

Sadly, his latest outing from the hell with good health folks at the Food Network, Sugar High, is just the opposite.  It not only seems to encourage daily consumption, but it appears to almost promote it.

Sugar High follows good old friendly Duff from place to place as he stuffs himself full of over-processed, over-sugared up, waistline enlarging, health destroying, nutrient devoid and, some would argue, highly addictive foods that would be better run through a trash disposal than the human digestive tract.   Even the name of this abomination of entertainment programing proudly intimates a parallel to the goal of illicit drug use, THE HIGH!

I only watched one episode, and I forced myself to sit through the entire thirty minutes.  Each segment leads off with Duff’s belly, then the rest of him, entering a food establishment and then with great exuberance, he goes on to tell us the ingredients being mixed together — ingredients which include liberal amounts of sugar. Then, after the sickeningly, sacchariferous preparation is complete, Duff gloriously gorges himself and then, via his little boy grin and charming mannerisms, conveys to the viewer just how delicious the sugar soaked concoction is.

I am a very strong proponent of personal responsibility and choice, yet these purveyors of  poor eating food fetishes are bringing a full frontal assault on the American television viewer.  Adult obesity is running rampant in this country, taking from those who suffer not only quality of life, but giving a host of obesity related and potentially life ending diseases.  Childhood obesity is stealing from our children their — well, their childhood.  Instead of being active and happy kids playing outdoors, their unnecessary and unfortunate girth confines them to idle, inactive, indolent activities ranging from computer gaming to watching shows like Sugar High.

For the above reasons, it is with a heavy heart that I add Chef Duff Goldman to the undesirable list as an Enemy of the State of Health and Fitness.
